Ingredients

4 cups fresh arugula, washed and dried
3 cups watermelon, cubed (preferably seedless)
1 cup feta cheese, crumbled (or vegan cheese for a dairy-free option)
1/4 cup red onion, thinly sliced
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar (or apple cider vinegar)
1 tablespoon honey or maple syrup (for a vegan option)
Salt and pepper to taste
1/4 cup toasted walnuts or pecans (optional)
Fresh mint leaves for garnish (optional)
Instructions
In a large mixing bowl, combine the cubed watermelon, arugula, crumbled feta cheese, and sliced red onion. Gently toss these ingredients together until they are evenly mixed.
In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), salt, and pepper until the dressing is well combined and emulsified.
Drizzle the dressing over the salad mixture. Toss gently to ensure that the dressing coats all the salad ingredients.
If using, sprinkle the toasted walnuts or pecans over the top for added crunch and flavor.
Garnish with fresh mint leaves for a pop of color and additional freshness.
