- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 2 tablespoons olive oil (extra virgin)
- 2 teaspoons ground turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lemon
- 1 pound fresh asparagus (trimmed)
- 1 tablespoon olive oil (for asparagus)
- Salt and pepper to taste (for asparagus)
- Optional: lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, turmeric, garlic powder, onion powder, smoked paprika, salt, pepper, and lemon juice to form a marinade.
- Add chicken breasts to the marinade and coat well. Marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator.
- Toss the trimmed asparagus with olive oil, salt, and pepper in a separate bowl.
- Line a large baking sheet with parchment paper or foil. Place marinated chicken on one side and asparagus on the other.
- Roast in the preheated oven for 20-25 minutes until chicken reaches 165°F (75°C) and asparagus is tender.
- Let the chicken rest for 5 minutes before slicing. Serve with roasted asparagus and optional lemon wedges.
