A classic Southern cornbread recipe that is fluffy, moist, and perfect for pairing with Southern-style meals.
Ingredients
Scale:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup cornmeal
1 cup granulated sugar
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Butter for greasing baking dish
Honey or syrup for serving (optional)
Instructions
Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish with butter, ensuring to cover all corners to prevent sticking.
In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cornmeal, and sugar. Whisk these dry ingredients until they are well blended.
In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
Pour the wet ingredients into the dry mixture, stirring gently until just combined.
Once combined, pour the batter into the prepared baking dish. Spread it evenly using a spatula.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cornbread to cool slightly in the dish before slicing into squares. Serve warm with honey or syrup if desired.
