4 boneless, skinless chicken breasts (about 1.5 pounds), preferably organic for the best flavor and texture.
1 cup fresh strawberries, hulled and sliced.
1/4 cup fresh basil leaves, chopped.
2 tablespoons olive oil, extra virgin is preferred.
2 tablespoons balsamic vinegar.
1 tablespoon honey, or maple syrup for a vegan alternative.
2 cloves garlic, minced.
Salt and pepper to taste.
Instructions
In a bowl, combine the sliced strawberries, chopped basil, olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper. Whisk until well incorporated.
Place chicken breasts in a resealable plastic bag or shallow dish. Pour strawberry basil marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour.
Preheat the grill to medium-high heat (about 375°F to 400°F).
