4 large flour tortillas
2 cups shredded cheese (Cheddar, Monterey Jack, or a blend)
1 tablespoon olive oil (for grilling)
For the Beef Patties:
1 pound ground beef (80/20 is ideal)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper, to taste
For the Spicy Quesadilla Burger Sauce:
1/2 cup mayonnaise
2 tablespoons hot sauce
1 tablespoon lime juice
1 teaspoon chipotle powder (optional)
For Toppings:
1 cup shredded lettuce
1 ripe tomato, sliced
1/2 red onion, sliced
Fresh cilantro, for garnish
Instructions
In a large bowl, combine ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently and form into 4 patties.
Preheat your grill or skillet over medium-high heat. Cook the patties for 4-5 minutes on each side until desired doneness.
In a separate skillet, heat olive oil and place one tortilla. Sprinkle half of the cheese, top with another tortilla, and cook until golden brown.
Flip the quesadilla and cook until both sides are crispy and cheese is melted. Repeat with remaining tortillas.
In a small bowl, mix mayonnaise, hot sauce, lime juice, and chipotle powder for the sauce.
Assemble the burgers by placing a beef patty on one half of each quesadilla, adding sauce and toppings, and folding over.
