Peach Arugula Salad

  1. Start by thoroughly washing all the fresh produce under cool running water. Pat the arugula dry with a paper towel and place it in a large salad bowl.
  2. Slice the peaches in half and remove the pit carefully using a knife. Then, slice each half into thin wedges, about 1/4 inch thick. Add the peach slices to the bowl with the arugula.
  3. Halve the cherry tomatoes and thinly slice the red onion. Incorporate these ingredients into the bowl as well, mixing gently.
  4. Sprinkle the crumbled goat cheese (or feta) over your salad.
  5. Toast the pecans or walnuts in a dry skillet over medium heat for about 3-5 minutes. Allow them to cool before adding them to the salad.
  6. Drizzle the balsamic vinaigrette over the salad. Toss gently to combine all the ingredients.
  7. Serve immediately, garnished with additional nuts or cheese if desired.
