4 large ripe tomatoes, chopped into bite-sized pieces
1 small red onion, thinly sliced
1 cucumber, diced into small cubes
1 bell pepper (any color), chopped
1 cup fresh basil leaves, torn
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon honey (optional)
Salt and pepper, to taste
1 teaspoon dried oregano
1 teaspoon dried thyme
Instructions
Start by chopping the tomatoes, cucumber, and bell pepper into bite-sized pieces. Slice the red onion thinly. Place all the prepared vegetables in a large mixing bowl.
In a separate bowl, whisk together the olive oil, red wine vinegar, honey, salt, pepper, oregano, and thyme until well combined.
Pour the marinade over the chopped vegetables in the mixing bowl. Gently toss everything together until the vegetables are well coated.
Add the torn basil leaves and toss gently again to incorporate.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
After marinating, give the salad a gentle stir and taste for seasoning. Adjust with more salt or pepper as needed. Serve chilled.
