1 pound large shrimp, peeled and deveined
2 tablespoons honey
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon minced garlic
½ teaspoon chili powder

4 cups mixed greens
1 avocado, diced
1 cup cherry tomatoes, halved
½ cucumber, sliced
¼ red onion, thinly sliced
¼ cup fresh cilantro, chopped
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon honey
Instructions
In a medium bowl, whisk together the honey, lime juice, olive oil, minced garlic, chili powder, salt, and pepper to create the marinade.
Add the shrimp to the marinade, ensuring they are fully coated. Let them marinate for at least 15 minutes.
Preheat a grill or grill pan over medium-high heat and grill the marinated shrimp for 2-3 minutes on each side until cooked through.
In a large salad bowl, combine the mixed greens, diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
