Ingredients
Scale:
1.5 lbs tender chicken thighs, boneless and skinless
2 tablespoons olive oil (or avocado oil)
1/3 cup honey (preferably raw or local)
1/4 cup soy sauce (or tamari for gluten-free)
4 cloves garlic, minced
1 tablespoon fresh ginger, minced (optional)
1 tablespoon cornstarch
2 tablespoons cold water
1 tablespoon sesame seeds, toasted
2 green onions, sliced thinly
Instructions
In a large mixing bowl, combine the chicken thighs with 1 tablespoon of olive oil and a generous pinch of salt and pepper. Toss until the chicken is evenly coated.
Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for about 6-7 minutes on each side, or until golden brown and fully cooked through.
In a small saucepan, combine honey, soy sauce, minced garlic, and ginger. Bring to a simmer over medium heat, stirring occasionally.
In a small bowl, whisk together cornstarch and cold water until smooth. Gradually add this mixture to the saucepan while stirring continuously. Continue to simmer for 2-3 minutes, or until the sauce thickens.
Once the chicken is cooked, pour the honey garlic sauce over the chicken in the skillet, ensuring each piece is thoroughly coated. Simmer together for 1-2 minutes.
Remove from heat and garnish with sesame seeds and sliced green onions before serving.
