This salad combines the juicy sweetness of fresh peaches with the tartness of blueberries and the creamy saltiness of feta cheese, creating a refreshing dish that's perfect for a light lunch, a nutritious picnic food, or a delightful side at summer barbecues.
Ingredients
Scale:
2 ripe peaches, sliced
1 cup fresh blueberries
4 cups mixed greens (such as spinach, arugula, and romaine)
1/2 cup crumbled feta cheese
1/4 cup walnuts or pecans, chopped (optional)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey (or maple syrup for a vegan option)
Salt and pepper to taste
Instructions
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Set aside.
Rinse the peaches and blueberries under cold water and pat them dry gently with a clean kitchen towel.
Cut the peaches in half, remove the pit, and slice them into thin wedges.
In a large salad bowl, add the mixed greens. Drizzle with half of the prepared dressing and toss gently to coat the greens evenly.
Top the greens with sliced peaches, blueberries, and crumbled feta cheese. Sprinkle the chopped nuts if using.
Drizzle the remaining dressing over the salad and toss gently to combine all ingredients.
Serve immediately or chill for 15 minutes before serving.
