1 pound ground beef
4 medium zucchinis, sliced
1 onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
2 cups shredded cheddar cheese
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup breadcrumbs
Fresh parsley, chopped (for garnish)
Additional cheese for topping (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes.
Add the chopped onion and minced garlic to the skillet. Sauté for another 3-4 minutes until the onion is translucent.
Stir in the sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
Remove the skillet from heat and stir in 1 cup of shredded cheddar cheese until melted.
Transfer the beef and zucchini mixture to a greased 9x13-inch baking dish.
Sprinkle the remaining cheddar cheese on top, followed by the breadcrumbs.
Bake in the preheated oven for 25-30 minutes until the top is golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
