Ingredients

- 1 pound ground beef
- 1 cup long-grain white rice
- 1 medium onion, diced
- 1 bell pepper, chopped
- 2 cups frozen mixed vegetables (carrots, peas, corn)
- 3 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh parsley or green onions for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef for about 5-7 minutes until it is no longer pink.
- Add the diced onion and chopped bell pepper and sauté for another 3-4 minutes.
- Add the long-grain white rice and mix well with the beef and vegetables.
- Pour in the beef broth and cream of mushroom soup, and stir in garlic powder, onion powder, paprika, salt, and pepper. Simmer for about 5 minutes.
- Transfer the mixture to a greased 9x13-inch baking dish and spread it evenly.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- After 25 minutes, remove the foil and stir in the frozen mixed vegetables. Recover and bake for an additional 10-15 minutes.
- Remove the foil and sprinkle the shredded cheddar cheese on top. Bake uncovered for another 5 minutes until the cheese is melted.
- Let it sit for a few minutes, and garnish with fresh parsley or green onions if desired. Serve warm.
