4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
1 ripe mango, peeled and diced
1 can (15 oz) black beans, drained and rinsed
1 red bell pepper, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 avocado, diced (optional)
1 lime, juiced
Instructions
In a bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Mix well and coat each chicken breast with the marinade. Let it sit for at least 30 minutes.
Preheat your grill to medium-high heat (about 400°F/200°C). Grill the chicken for 6-7 minutes on each side, until it reaches an internal temperature of 165°F (75°C).
While the chicken is grilling, prepare the mango black bean salad by combining diced mango, black beans, red bell pepper, red onion, and cilantro in a large mixing bowl.
Squeeze fresh lime juice over the salad and season with salt and pepper to taste. Toss gently to combine all ingredients.
Once the chicken is grilled, let it rest for 5 minutes, then slice it into strips.
On a serving platter, layer the mango black bean salad and top with sliced grilled chicken. Add diced avocado if desired.
