Instructions

  1. In a bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper until well combined. Add the chicken breasts, ensuring they are well coated with the marinade. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  2. Heat your outdoor grill to medium-high heat, around 375°F to 400°F (190°C to 204°C).
  3. Remove the chicken from the marinade and shake off any excess. Place the chicken breasts on the grill. Cook for about 6-7 minutes on one side until grill marks appear.
  4. Flip the chicken breasts and immediately top each with slices of fresh mozzarella and tomato. Close the grill lid and continue cooking for another 6-7 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  6. Place each grilled chicken breast on a serving plate. Top with fresh basil leaves, a drizzle of basil pesto, and balsamic glaze for added flavor.
