1 cup strawberries, hulled and diced
1 cup pineapple, diced
1 cup kiwi, peeled and diced
1 cup mango, diced
1/4 cup red onion, finely chopped
1/4 cup fresh mint leaves, chopped
2 tablespoons honey, or more to taste
1 tablespoon lime juice, fresh-squeezed
6 small flour tortillas
1/4 cup sugar
1 teaspoon ground cinnamon
1/4 cup melted butter
Instructions
In a large mixing bowl, combine the diced strawberries, pineapple, kiwi, and mango. Toss gently to mix.
Add the finely chopped red onion and fresh mint. Stir carefully to avoid bruising the fruit.
Drizzle the honey and lime juice over the mixture. Mix gently until the fruits are evenly coated. Cover and refrigerate for at least 30 minutes.
Preheat your oven to 350°F (175°C).
In a small bowl, combine the sugar and ground cinnamon. Set aside.
Brush both sides of each tortilla with melted butter.
Sprinkle the cinnamon sugar mixture evenly over both sides of the tortillas.
Stack the tortillas and cut them into wedges (6-8 per tortilla).
