1/2 cup shredded cheese (cheddar or Mexican blend)
1/4 cup fresh cilantro, chopped
1/2 cup homemade ranch dressing (or store-bought)
Optional: zesty salsa
Instructions
In a medium bowl, combine olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Rub this spice mixture all over the chicken breasts and allow to marinate for at least 15 minutes.
Preheat your grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.
Lay a tortilla flat on a clean surface. Start by adding shredded lettuce in the center, followed by diced tomatoes, avocado slices, grilled chicken strips, shredded cheese, and cilantro.
Drizzle ranch dressing over the fillings. If you like it spicy, add some zesty salsa.
Fold in the sides of the tortilla and then roll it tightly from the bottom to the top.
Slice the wraps in half diagonally and serve immediately, or wrap them in foil or parchment paper for an on-the-go meal.
