Ingredients
Scale:
2 cups cooked chicken, shredded or cubed
1 cup orzo pasta (uncooked)
1 cup broccoli florets
1 cup cherry tomatoes, halved
1 bell pepper, diced
3 cups chicken broth
1 cup heavy cream
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the uncooked orzo, chicken broth, heavy cream, garlic powder, onion powder, salt, and pepper. Stir well to combine.
Add the cooked chicken, broccoli, cherry tomatoes, and bell pepper to the mix. Gently fold the ingredients together until well mixed.
Transfer the mixture to a greased 9x13-inch baking dish.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and stir the mixture gently. Sprinkle the mozzarella and Parmesan cheese evenly on top.
Return the dish to the oven, uncovered, and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
