  1. In a mixing bowl, combine the cream cheese, sour cream, mozzarella cheese, Parmesan cheese, chopped spinach, minced garlic, salt, and pepper. Mix until thoroughly combined and creamy.
  2. Scoop out the spinach dip filling and shape it into small logs around the mozzarella sticks. Place them on a baking sheet lined with parchment paper. Freeze for about 1 hour, or until firm.
  3. Prepare three shallow bowls—one with flour, one with beaten eggs, and one with breadcrumbs mixed with Italian seasoning and garlic powder.
  4. Remove the filled mozzarella sticks from the freezer. First, roll each stick in flour, then dip it into the beaten eggs, and finally coat well in the breadcrumb mixture. Repeat this process twice.
  5. If baking, preheat your oven to 400°F (200°C). If frying, heat oil in a deep pan over medium heat until it reaches 350°F (175°C).
  6. For baking, place the breaded sticks on the prepared baking sheet and bake for about 15-20 minutes. For frying, carefully place sticks in the hot oil and fry for 2-3 minutes on each side.
