Warm up your winter nights with a hearty bowl of Creamy Cajun potato soup. This comforting dish combines the rich flavors of Cajun cuisine with the creamy texture of potatoes, resulting in a spicy potato soup that’s perfect for lunch or dinner.

4 large russet potatoes, peeled and diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 cup heavy cream
1 tablespoon Cajun seasoning
1 teaspoon salt (to taste)
1/2 teaspoon black pepper
4 slices of bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
Chopped green onions for garnish
Crushed red pepper flakes (optional, for extra heat)
Instructions
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, leaving the grease in the pot.
Add the chopped onion to the pot and sauté for 5 minutes, or until translucent and fragrant.
Stir in the minced garlic and cook for an additional 1 minute.
Add the diced potatoes to the pot along with the chicken broth, Cajun seasoning, salt, and black pepper. Bring to a boil over high heat.
Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.
Using a potato masher or immersion blender, mash or blend the soup to your desired consistency.
Stir in the heavy cream and cook for an additional 5 minutes.
Taste and adjust seasoning if necessary.
Serve hot, garnished with crumbled bacon, shredded cheddar cheese, and chopped green onions.
