1 (8 oz) package cream cheese, softened
1 cup sour cream
1 cup mayonnaise
2 cups sweet corn (fresh, canned, or frozen)
1 cup diced tomatoes, drained
1/2 cup diced red onion
1/2 cup diced bell pepper
1/2 cup sliced jalapeños
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Chopped fresh cilantro for garnish
Extra shredded cheese for topping (optional)
Instructions
In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until creamy and well blended.
Add the sweet corn, diced tomatoes, diced red onion, diced bell pepper, and sliced jalapeños to the cream cheese mixture. Stir until evenly incorporated.
Sprinkle in the garlic powder, cumin, chili powder, salt, and pepper. Stir again to ensure the spices are evenly distributed.
Gently fold in the shredded cheddar and Monterey Jack cheese, reserving a small amount for topping.
Transfer the dip to a serving dish and spread it out evenly. Top with the reserved cheese and garnish with fresh cilantro.
Cover the dip with plastic wrap and refrigerate for at least 1 hour before serving.
