1 cup fresh orange segments (about 2 large oranges)
1/2 cup cucumber, thinly sliced
1 cup fresh feta cheese, crumbled
1/4 cup olive oil
2 tablespoons fresh orange juice
1 tablespoon white wine vinegar
1 teaspoon honey (optional)
Salt and pepper to taste
1/4 cup toasted walnuts or pecans (optional)
Fresh herbs (such as mint or basil, optional)
Instructions
Prepare the citrus: Peel the oranges, cut off the top and bottom to create a stable base, slice down the sides to remove the peel and pith, then segment the oranges by cutting between the membranes.
Make the dressing: In a small mixing bowl, whisk together the olive oil, fresh orange juice, white wine vinegar, honey (if using), salt, and pepper until emulsified.
