- 4 ripe peaches, preferably organic
- 2 tablespoons melted coconut oil or unsalted butter
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon for topping
- Optional toppings: vanilla ice cream or yogurt, chopped nuts, fresh mint leaves
Instructions
- Preheat your oven to 350°F (175°C).
- Wash the peaches, slice them in half, and remove the pits.
- In a mixing bowl, combine the melted coconut oil (or butter), brown sugar, and ground cinnamon. Mix until smooth.
- Brush the cut sides of the peaches with the cinnamon sugar mixture.
- Place the peaches cut-side up in a baking dish.
- Mix the granulated sugar and ground cinnamon for the topping and sprinkle over the peaches.
- Bake for 20-25 minutes or until soft and golden brown.
- Remove from the oven, let cool slightly, and serve warm with optional toppings.
