Ingredients
Scale:
6 strips of thick-cut bacon (preferably applewood-smoked)
2 tablespoons maple syrup (use pure maple syrup)
1 tablespoon chipotle sauce (adjust based on spice preference)
4 large eggs (fresh free-range eggs)
Salt and pepper to taste
6 small corn or flour tortillas
1/2 cup sour cream or Greek yogurt
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice (freshly squeezed)
1/2 teaspoon garlic powder
Salt to taste
Fresh avocado slices (optional)
Chopped green onions (optional)
Fresh lime wedges (optional)
Instructions
In a large skillet over medium heat, cook the bacon until crispy, about 6-8 minutes.
While the bacon is still warm, drizzle the maple syrup and add the chipotle sauce directly into the skillet. Toss to coat the bacon thoroughly.
In the same skillet, reduce heat to low. In a bowl, whisk the eggs together with salt and pepper until well blended. Pour the eggs into the skillet and cook gently, stirring frequently until just set.
In a separate dry skillet over medium heat, warm the tortillas for about 30 seconds on each side.
Divide the scrambled eggs evenly among the warm tortillas. Top each with a few pieces of the glazed bacon.
In a small bowl, mix together the sour cream (or Greek yogurt), chopped cilantro, lime juice, garlic powder, and salt until well combined.
Drizzle the cilantro lime crema generously over the bacon and eggs in each taco. Add any additional toppings you desire.
Enjoy immediately while hot, with extra lime wedges on the side!
