1.5 lbs boneless, skinless chicken thighs or breasts
1 cup BBQ sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
4 medium-sized potatoes, cut into 1-inch cubes
1 teaspoon paprika
1 teaspoon dried thyme
2 tablespoons butter
Chopped fresh parsley or cilantro for garnish
Shredded cheese (optional)
Instructions
In a large bowl, combine the chicken thighs or breasts with BBQ sauce, garlic powder, onion powder, salt, and pepper. Allow the chicken to marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
Heat olive oil in a large skillet over medium heat. Add the cubed potatoes, paprika, dried thyme, and a pinch of salt. Cook for about 10-12 minutes until the potatoes are golden brown and fork-tender.
Push the potatoes to the side of the skillet and add the marinated chicken to the center. Cook for approximately 5 minutes on one side until nicely browned.
