This nutty, fruity dish combines crisp apples, tart cranberries, and crunchy carrots, making it a colorful addition to any meal. Perfect for light lunches or as a healthy side, this salad is both nutrient-rich and incredibly satisfying.
Ingredients
Scale:
2 medium apples, diced (preferably tart varieties like Granny Smith or Honeycrisp)
1 cup fresh cranberries (or 1/2 cup dried cranberries if fresh are unavailable)
2 cups grated carrots (about 3 medium carrots)
1 cup chopped walnuts or pecans
1/2 cup feta cheese, crumbled (optional)
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey (or maple syrup for a vegan option)
Salt and pepper to taste
Instructions
Start by washing and dicing the apples into bite-sized pieces.
Peel and grate the carrots using a box grater or food processor until you have about 2 cups.
In a large mixing bowl, add the diced apples, fresh or dried cranberries, grated carrots, and chopped walnuts or pecans. If using feta cheese, add it to the mix now.
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until the mixture is well combined.
Pour the dressing over the salad ingredients and gently toss everything together until well coated.
Let the salad sit in the refrigerator for at least 15 minutes to allow the flavors to meld. Serve cold.
